Aussie Bites

Costco was my favorite part of being 24 and still living with my father, that and not paying rent. When we’d get to the store I’d throw 4 boxes of Aussie Bites into the cart and call it a successful trip. Now that I’ve moved out, and become a full-fledged grown-up 😉 , I buy my big box stuff online and I can’t find Aussie Bites at our grocery store; plus I looked up the ingredients online and they’re really not as healthy as I thought.. tons of sugar!

So I made a vegan, gluten-free version with no added sugar that is way better than the ones you buy in stores. Don’t be afraid of the long list of ingredients, they’re all really good for you and packed with protein.

This is a vegan version of the best little muffins you'll ever have.
Cuisine: Vegan
Serves: 24 mini muffins
  • 1½ cups Rolled Oats
  • 1 cup Oat Flour
  • ¼ cup Quinoa, cooked
  • ¼ cup Apricots, chopped
  • ¼ cup Raisins
  • 3 Tablespoons Dried Coconut
  • 2 Tablespoons Sunflower Seeds
  • 2 Tablespoons Chia Seeds
  • 2 Tablespoons Flax, I used ground but whole seeds work too if you have them
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt
  • ½ cup Maple Syrup
  • 2 Tablespoons Almond Butter
  • ¼ cup Coconut Oil
  • 1 Banana, mashed
  • ½ tsp Vanilla Extract
  1. Mix together dry ingredients in large bowl with wooden spoon
  2. Whisk syrup and almond butter together in a microwave safe bowl
  3. Microwave syrup for about 1 minute until bubbling
  4. Remove and mix in the coconut oil and vanilla while still warm
  5. Stir wet mixture into the dry until well combined
  6. Refrigerate mix for 1 hour or until cool
  7. Preheat oven to 350°
  8. Grease miniature muffin pan with coconut oil
  9. Spoon mixture into pan and press to pack each cup
  10. Bake for 10 minutes
  11. Remove to cool and enjoy!
